Dried fruit has lost most of its water, so the sweetness is clearer and it keeps longer. In Damascene homes it sits in the winter dish beside walnuts and almonds, and in Ramadan it gets soaked into khoshaf. Some fruit is for chewing, like apricots and raisins; some comes as slices that snap or go into tea. Pick by use: snacking, the table, or a hot glass. Texture changes the storage too: soft fruit needs a sealed jar so it doesn't dry out, crisp slices need an airtight tin so they don't go soft. Here you will find dried apricots, golden raisins, goji berries, dried dragon fruit, dried lemon and banana chips, each with a page on its look and taste.
