About this product
Dried apricots: flat, round, golden orange, some pale and some leaning red. The skin is wrinkled and glossy, and against the light the edges look almost translucent. They bend between your fingers rather than snap.
Taste
Deeply sweet with a light tang that wakes the tongue, and a long chew, so one apricot takes its time. Eaten with a walnut or an almond, the richness softens the tang and brings the sweetness forward.
How to enjoy it
In Ramadan it is soaked with raisins and dried figs to make khoshaf for the iftar table; in winter it joins walnuts and almonds in the guest dish, and it gets chopped into cakes and rice. Some hosts press half a walnut or an almond into each one before serving.
How to store it
Keep it sealed somewhere cool and dry; if it hardens, a short soak in warm water softens it again. Don't store it in the same tin as roasted nuts, because its moisture softens them.
