About this product
These are pistachios with the shells already off, just the kernels. Most are green, many still wear a thin violet skin, so a bowl of them shows light green, deep green and purple side by side. Each kernel is smooth and slightly long, ready to eat as it is.
Taste
Rich, with a light natural sweetness and a gentle crunch; the violet skin changes the colour, not the taste. If you want the same nut with the fun of cracking, look at the pistachios in shell, roasted or salted.
How to enjoy it
In Damascus people chop it over ice cream, knafeh and muhallabia, fold it into ma'amoul and baklava for Eid, or set out a small dish of it with coffee for guests.
How to store it
Keep it in a sealed jar somewhere cool, dry and dark; shelled pistachios react to air faster than those in the shell, and the fridge keeps them from going rancid if they will be around a while.
