About this product
Pistachios roasted in their shells, and these shells are anything but pale: beige, marbled with reddish-brown streaks and patches, as if brushed with coffee. Most are split at the tip, showing the kernel in its dark wine-red skin. The shells have a slight sheen and fine specks, and the nuts are long and plump.
Taste
Roasting deepens the flavour and gives a drier crunch than the shelled kind, and opening them one by one slows you down. If you hit one that is fully closed, skip it; those are usually hard and won't open.
How to enjoy it
It belongs to long evenings: one bowl in the middle, a small one beside it for shells, and it turns up on Eid tables and at Ramadan gatherings after iftar. Its dark shells stand out next to the pale salted pistachios, so the two make a two-tone bowl.
How to store it
Seal it tightly and keep it away from damp, because air softens the shell and takes the crunch; if it goes a little soft, a few minutes in a dry pan over low heat brings it back.
