About this product
Sugar-coated qudameh is roasted chickpea dressed in white sugar. Each piece is chickpea-sized and round, with a matte, chalky shell, and on some the creamy colour of the chickpea peeks through. In a bowl they could pass for tiny dragées.
Taste
The sugar melts first, then the dry chickpea inside crumbles and brings a light roasted flavour under the sweetness. The crunch comes in two layers, sugar snapping and chickpea crumbling, so each piece is gone fast.
How to enjoy it
A familiar sweet in Damascene guest dishes: out for Eid next to the dragées, loved by kids, and eaten by plenty of grown-ups with a glass of tea. Some households mix it with yellow qudameh to balance sweet and plain.
How to store it
Store it in a closed tin somewhere dry, as damp melts the sugar and glues the pieces together; skip the fridge, because the moisture that forms when you take it out does the same.
